Beat the Whites and yolks of six
', eggs separately. Let them stand a
moment and place one dozen and a
half medium sized oyster, without
their liquor, In a saucepan with 3 ts-
blespoonful of butter. salt. 'pepper,
and allesspoont'ul of lemon juice,
Then proceed to cooking the omelet,
mixing the whites and yolks of
‘6335 together first. and pouring tlrcm
into a. medium hot pan on a little melt—
“ 6d butler. When the omelet is brown
on one. side, the oyster. wltich musi
be cooked only till the cdges curl, may
be poured in. Fold the omelet over
. them. flap it quickly over to the other
side, slightly brown this and slip at
once on to a Itot dish. Brush over
with mclted butter. add chopped par-
' sley and serve at once.
Fried Eggplant a la Rudd.
This method of frying eggplant has
been found much more succcssful than
tlm usual way of dipping in batter.
when the plant is usually cooked un-
til bur—ed or clsc is hard and raw In
the center.
Select mcdllltursized eggplants. if
. the. plants are too large the meat is

. hard. Pare the plants and cut into
quarterdnch slices. Sprinkle salt
over each slice and cover with a

Oyster Stew With Cream.

for the interior decorator to solve.
There must be a little sunlight in
the room. and since nature does not
supply it, the decorator must find a
way to imprison a reflection, orin
some way artistically substitute some.

unusual way. The walls were finished
In corn color, paneled off by cream
and black narrow molding. decked
here and thcrc in the carving with
small sunken gold disss. The ceiling
was in rich cream color, with four

domes, one to each corner, each fin-
ished with black and gold tassels.
At the windows the outer draperies
used were black velvet, and Inside,
shirred closely from the top to the bot-
tom rod on the casemcnt, was a cur-
min of gold gauze. Thc gauze reflect-
ed the light so that it seemed just like
sunlight In the roonr. Falling undcr

the softest and slicerest not. A large
black-bordcred Persian rug covered

side had the end rolls finished with
gold cord and tasscls, while the black

other spot of sunny light. By a desk

may be pulled over the gold sash, for

pretty as when reflected by it.
