COCOA.“ AND BANANAS.
Bonacca is an island and in its way is
one of the liveliest places in Spanish
Honduras. Its liveliuess, however, is
peculiar to itself, and there are few
places like it. The island has two uses.
It grows excellent bananas and cocoa-
num and affords a refuge for all the flies
of the surrounding islands.
There are many bananas raised at
Bounces, but they do not rull'éoilarge as
,. :‘f on the mainland; the-éwceaniits do
"splendidly. Indeed, it is to encourage
the oocoanut growers that the fruit men
take their. bananas At present there is
a sort of a boom in the cocoanut busi-
ness, and many are starting cocoanut
plantations, or “cocoauut walks,” as
they are called here. It is a safe invest-
ment of money, but the return is slow.
The trees are planted along the sole
shore-inn Sandy soil mixedwith loam.
xtirill‘rom the time a-tr‘ee is planted it takes
seven years before it is sufficiently large
«to heart-nuts. But just as soon as the
cocoanuts form on the trees then a steady
income sets in. The average number of
cocoannts to a tree is one hundred and
twenty per year. In the best places
trees will bear one hundred and fifty
per year. They are sold according to
the season of the year, from ten dollars
to thirty dollars per thousand. Our cap-
tion was paying twenty dollars per thous-
and for good nuts.
The cocoanut walk needs hardly any
care. thn ripe the nuts fall od‘ them-
selves, and all that is necessary is to pick
them up. The husking.:of¢ocoannts is
the most tiresome work; onl‘a plantation,
but the native inhabitantsi'are very skill-
ful at it, and they charge Every little for
their service. After being hushed the
nuts are piled up, and when the first
steamer arrives are loaded into dories
and paddled to the ship. As they are
passed up the sides they are counted,
and a check given immediately to the
planter, who, on going to the captain or
parser, receives his mony in Mexican
dollars or Hondun'an money. The whole
business is conducted on a- cash basis.
They are plenty of small islands which
can be bought cheap for cash on which
there are now sufficient trees to pay for
the money invested in a short time, as
well as to support the planter while
waiting for his new trees to grow.
The cocoauut industry is increasing
every year, while the demand for the
nuts in New York and New Orleans is
always equal to the supply. The usual
method of a planter who comes into this
country to start a new plantation is to
begin withthe banana. Nine months
after the.banana- sucker is planted a
yield ‘is obtained. ‘The young shoots
are planted eighteen or twenty feet
apart, and between them a eocoanut tree
is placed. The heavy growth of the
banana shades the young plant until it is
well rooted, when it soon shoots up
ahead. The soil is so rich that banana
and eoooauut will soon interfere. Then
2the banana suckersare out dewn and the
trees kept clean. Thus, while the planter
lives upon and makes a profit from his
bananas, the future fortune in coceanuts
is rapidly nearing its :consumation.
There is‘ little trouble in making plantar
tions in this country. Land costs noth-
ing. and/large censessious may be ob-
tained frem the Hondurian government.

Iu a pretty little village near Madres
called Poounmalee, as well as in Barga-
lore, there dwell very many pensioners .
with their families. ‘I was wont to pay
periodical visits to this place on pro-
fessional duty ; and certainly I found it
at first not only strange but grotesque to
see young men and maidens and num-
erous children with faces as black as a
minister's coat but yet bearing some
good old Scottish name and speaking
the English with an accent as if they
had been born and bred in the wilds of.

' became louder, until we were able to dis-
cowr whence it emanated. I got out of
the marriage before an opening in the
trees, and winding my way by a nar~
row path I came at last to a small bun-
galow where a man was strutting up and
down the vernada playing on a genuine
pair of Scottish bagpipes. His garments
were white, but his face was perfectly
black. He was astonished at_:my' np-C
pearance, and so was I at his; and my
astonishment was not diminished when
in answer to a question as to his name
rho replied to sin a pleasant. Argyll-

that night I knew him well. Blush
though he was, he was a most worthy
man; and one of the last and duties I
performed ere leaving India was to visit
him‘ when dying in the hospital, audto
bury ‘him‘ when dead among the sleep-
ing Scotchmen in St. Andrew’s Church-
yard.

Under this heading the editor of
“Science" groups together a great deal
of information on the action or" tea,
coffee and-chocolate. The latter, he
keys, from its large proportion of albu-
men, is the most nutritious beverage,
but at the same time, from its quantity
of fat, the more-difficult to digest. ,ths
aromatic substances. llowever,1strengthen', -
the digestion. A cup of chocolate is an
excellent restorative and invigorating
refreshment even for weak persons, pro-
vided their digestive organs are not tent, i.

to chocolate his health and hilarity dur-
ing his later years.
Tea and coffee do not afford this ad
vantagfi“: Albumen in tea. leaves, T. h
min in coffee berries, are represented in
very scanty proportions. The praise of
tea and or the as nutritive substanceis,
therefore, hardly warranted. Tea and
office, though of themselves not dificult '7
of digestion, tend to disturb the diges-
tion of'albuminons substances by precipi4
toting themlfromtheir dissolved stale.
Milk, thereforcg'if mixed with tea or:
Cl fi'ee, is more difl‘icult of digestion than
if taken alone; and coffee alone, without
cream, promotes digestion after dinner
by increasing the secretion of-juices.
The volatile oil of coffee and thoeni- '
pyreumatic and aromatic matters of
chocolate accelerate the circulation
which, on the other hand, is calmed by
ten.
Tea and coffee both excite the activity
of the brain and nerves. Tea, it is said,
increases the power of digesting theim-
pressiens we have received, creates a
thorough meditation, and, in spite of
the movements of thoughts, permits the
attention to be fixed upon a certain sub-
ject. On the other hand, if teais taken
in excess, it causes an increased irrita-
bility of the nerves, characterised by
sleeplessuess, with a general feeling
of restlessness andjftrembling of the
limbs. Oogee, also. if taken in excess,
produces sleeplessncss and many balc-
fnlefi'eots very‘eimilar to 'those of tea
drinking. Cofi‘ee, however, produces
greater excitement and a sensation of
reatleness and heat ensues. For throw-
ing of this condition, fresh air is the
batmfidotc.
