opening of the oyster season:
”Most persons agree that on acold
day a hot oyster stew goes right to
the spot and such a slow has been
recognized for years back as a highly
nutritious meal. Oysters contain
protein. calcium. phosphorus, iron.
iodine and in themselves are a de-
licious food.
“Statutes have been on the law
books of Connecticut for years giving
to the State Department of Health
the power to inspect oyster beds and
the way in which oysters are handled
tor the market. During the past
few years there has been no occa-
sion where Connecticut oysters were
suspected as causing disease. How-
ever. with the increase in pollution
of the waters of the state. it has been
necesssry to make regulations for
protection of public health and the
sanitary inspection of oyster beds.

oysters that are sold for food to he
