Make Apple Butter.
All who like apple butter stand up.
It is a favorite dish for young and old
alike and the right constituency is the
point in making it. says a bulletin

The right proportion of apples and
sweet or sterilized cider may be kept
‘in mind. Take five gallons of cider
and boil down one half, skimming oc-
casionally during boiling. Wash, pare.
quarter and core apples and use in pro
portion of two parts apples to one of
boiled cider. Boil slowly for four or
six hours, stirring often to prevent
burning. When the ‘butter is two-
thirds done, add about a pound of
brown sugar to the gallon and spice to
taste. it the apples are a little over-
ripe. add lemon or vinegar to give acid
taste. Apple butter should be stored
In sterilized receptacles and the tops
sealed, or covered with paradln ppper
or cloth.
Another method of making apple bul-
ler is to make a smooth sauce of the
apples before adding to the boiled
cider and use in the same proportion
as above. This method requires about
three hours of cooking after the addi-
tion of the apples.
A third method requires no cider.
I'll-m tart apples are allowed to sim-
mer for a long time until of the right
consistency. When nearly done- a
stand of brown sugar is added for
each gallon and the butter is spiced
to taste. ‘ '
Baked Apples with Banana Sauce. l
Core six apples, sweetened, add a'
little water and bake in usual way.
Bean Loaf. .
Lima beans or marrowfals may be
used for this recipe.
One cupful dried beans, 1 cupi‘ul
liquid, 6 tablespoonsful flour, 1 small
onion, grated, 1% teaspoonsful salt. 1
small red pepper, minced fine, is ten-
spoonful paprika, 2 tablespoonle
minced parsley, 1 cupful bread crumbs.
