soar to prohibitive heights and only
the wealthv be enabled to indulge in
the delicacy.
These fears arc not altogether un
founded although the condition which
makes the scarcity of oysters in the
markets is probably only a temporary
due. the freesing up of the bays and
islets in which most of the marketable
oysters are- planted preventing the
dredging and marketing.
This is due of course entirely .to the
vgry cold weather of the past, six
weeks and will disappear with the
breaking up of the ice, but there is
another condition which may make the
oyster of the "sot'HOi young oysters
for the past three years.
Reports of the ,acarcity of oysters
and the high price at retail have been
current for some time, and Saturday
a BridgeportJ-‘nrmer reporter visited
the office of the H. J. Lewis Oyster Co..
of Bridgeport to ask an explanation of
the causes and the prospects for tht
future. Mr. Albert H. Lewis received
thud-”armor representative and gave a
detailed explanation of the conditions
existing in the oyster- business at pres-
cut.
The present scarcity of marketable
oysters, he said. is due in a great
measure to tho freezing up of the bays
and inlets, which prevents the dredging
by boat and the shipping by water to
the market. Thls is true of the Great
South Bay. Jamaica Bay. Port Jeffer-
son and other places around Long is-
land and through the Sound. and also
in Chesapeake Bay. the great source at
supply for the=l\'est.
The formation of bcavy lcc renders it
impracticable to dredge with heels. At
present in Great South Bay holes are
cut in the ice and the dredging is done
by horse. Only a few of the market
growers care to dredgc in this manner
as it adds greatly to the expense and
the advance in oricc'lo the grower has
been trifling.
A great many growers are not send-
ing any oysters to market at all be-
cause the supply is limited. Last year
thtt'e was practicallyho set of young
oysters. and the set of the two prev—
ious years was very small. Many of
the donors do not care to deplete their
beds at the present prices The Lewis
Co. of this city is not sending any oyso
ters to market for opening The Strat-
ford Oyster Co. the 11. J Lewis 00..
and the other local concerns deal prin-
cipally in the seed 0 stars. and only
the Andrew thbl (56’ supplies many
oysters for opening. 0! course ice in
terferes with all of this work, but not
to the same extent on with the planta-
tions in the frosenbays. ,

Mr. Lewis replied that he did not think

are at least four years old.
He did not think that the cold would
affect them. 'He said it was necessary
to freeze an oyster almost solid to kill
