“ HOW to get aTurkey Into the Hell
Shape for Eating.”

Masons. Ens. :—-You may think this a
strange subject, and ask why we introduce
it at this particular season, but we are use
to inform you that the matter of eatsbles is
proper for discussion at any time; and al-
though Christmas and New Years have
past and we are now among the closing
hours of Lent another Christmas-tide will
come in due time, and, in anticipation, we
hope to say a. few words that may assist in,
solving a perplexing problem. >

Anybody can get a turkey fat by cooping
it and feeding regularly for ten or twelve
days; but “ how to getit into the best shape
for eating,” is the question.

In addition to the usual quantity of corn
and water furnished, English walnuts are
the best food for a turkey. A second-hand
or inferior quality can be obtained cheaply
for that purpOse. To “ finish ” the bird and
render him “ perfectly delicious,” a certain
amount of Sherry wine should be given
several days before “ sacrifice." The wine
will penetrate the entire flesh of the turkey
and leave it flavored in a way that no “ af-
ter-death-seasoning” can possibly accom-
plish. A little training is all that is neces-
sary to enable the turkey to feed itself in
the most high-toned manner. It is well
known that a small bird like a canary can
be taught to load and fire off a. cannon, If
so, there is nothing to prevent a. turkey

from learning how to use a. nut-cracker and,

corkscrew to perfection; and thus, to con-
tinue the argument, by so arranging the
coOp, the turkey can do the work 0 : “fat-
ting itself up ” in systematic style. A coop
with suitable apartments and supplies in
reach of the turkey, would enable it to fat-
ten and season itself right along, after a lit-
tle preliminary instruction. There is noth-
ing to prevent a turkey from handling, the
contents of a casior, or helping itself to
the difi‘erent kihds of “ bottled victuals” as

\ easily as aperson. All there is abbut it is

the oddity of the thing. If men. and wo-

men of intelligence hoot at the idea as pre-

posterous, or at least, impossible, they new

Distillery Milk.

.stsns EDITORS :—Since I have been liv-
ing in Wilton, my attention has frequently
been drawn to certain freight cars standing
upon the track of the Railroad, dripping
with moisture and reeking with a disagree-
able odor; and on inquiry, I learned that
they contained malt or brcwc're’ grains from

the distillery, to be used as food for cows,~

because cheaper in proportion to the quan-
tity of milk obtained than any other feed.

I am told that the cows will not eat it at'

first, but soon become accustomed to it and
unit greedily, and if.they have too mu¢b
are made drunk by it, so as to stagger about
the field unable to-control their legs. My
stomach naturally revolied at the» idea of
milk from such a source, but not wishing to
condemn the practice ‘without more light. I
wrote to Dr. Morris, Assistant Sanitary Su-
perintendent of the Metropolitan Board of
Health of the city of New York, and re-

ceived from him the following reply, which '

may be of interest to your readers, especial-
ly to those who are .supplted with milk
drawn from this source. Respectfully,

Yours of March 3lst, was duly received.
Owing to a pressure of duties, I have been
unable to reply before. ,

The practice of feeding brewery or dis-
iillers' grains in this State is prohibited by
State Law, a. copy of which is herewith en-
closed. * _.
Chemical analysis clearly demonstrate that
the milk from such feeding deficient in the
normal quantity of butter as in normal milk
the proportion of butter is 4 to 5 per cent,
while in brewery grain fed milk it is only
about 2 per cent. The proportion of casein
and sugar is also diminished, and the con-
stitutional water therein is largely increased;
hence the ap arcntly increased quantity.

The use a such milk 2's undoubtedly - dam:-
mental to the health of those-using it, for the
reason that it is deficient in its most nutri-
tious elements—~viz: butter, casein, and au-

g Normal, healthy, unadulterated milk
should show 100 degrees by the Lactomctor
at a temperature of 60 degrees Farenheit;
any marked deviation from this standard
indicates the amount of adulteration by

water.

I have no doubt that the new Health De-
partment will institute a rigid inspection of
milk in this city, and any milk found adul-
terated, or coming from cows "fed upon
brewery or distillery sins will either .be

confiscated, or procee ings under the Law
will be commenced against [the .parties of-.
fending. The same Law should be enacted by
the Legislature of Connecticut.

If there are any other points, or facts you
desire, I will cheerfully give you all the in-

MANTIC RAILROAD—The work on this im-
portant line of railroad is now about com-
pleted between New Haven and Middle-
town, and is being pushed forward rapidly
on the balance of the line to Willimantic, a
distance of only 30 miles with so much vig-
or as to give assurance of early c‘ompletion
throughout. As the prospect of the open-
ing of this new and direct route to Boston
draws nearer, the confidence of the public
seems to increase in its advantages for busi-
ness, and the sale of the first mortgage
bonds, is reported by the financial agents to
be so satisfactory that all the funds desired
for the energetic prosecution of the work are
obtained without delay. The first issue of
$500,000 was readily disposed of to invest-
ors, not in Connecticut alone, but also in
New York and elsewhere as the high class of

, the security offered made the loan more ac-

ceptable than some others bearing a higher
rate of interest, but not presenting equal at.
