OF THE
FAIRI-‘IELD COUNTY AGRI-
CULTURAL SOCIETY.
HIS Fair will he holden in NonWALx,'on
. Tuesday, Wednesday,Thursday and Fri-
day the 27th, 28th, 29th, and 30th days ofSep-
tember 1859, on the Mott Property Park, a
convenient rnd central point of access from
the Railroads.
The Committee of Arrangements are confi~
dent that the liberal Premiums otl‘ered,‘and
the desirable and attractive arrangements
which will be made, will bring out not only
unsurpassed display of the fine animals with
which our County abounds, but will also se-
cure the co-operation of our many Manufac-
turers, Mechanlcs Artizans, 65., thus render—
ing this Fair one of the most attractive and
satisfactory exhibitions ever held in this
County.
The efforts of every friend of the Society
are earnestly solicited to aid to the extent of
their ability, in adding any feature of attrac-
tion to the Exhibition. The Ladies ,also, are,
cordially invited to present the varied fruits
of their handiwork.
It is desirable that early notice be given the
Secretaries by those who design to exhibit,
and the amount and character of space they
will require,in order that suitable arrange-
ments may be made therefor.
Arrangements will be made with our Rail-
roads for the transmission of all articlcsin-
tended for exhibition, free.
Those appolnted on Committees will confer
a gyeat. favor by notifying the Secretary of
their Willingness to serve, at the TicketOfllce
on the first day of the Fair. They will also
greatly facilitate the business of the Exhibi-
tion by being promptly on the ground at the
hours named by the Secretary.
Several distinguished Agricultural Speak-
ers among whom are Prof’s. Johnson and Nor-
ton,of‘ Yale College, have been engaged to
address the members of the Society on the dif—
ferent days of‘ the Exhibition.
The Vice Presidents of‘ the Society in ma
different towns are earnestly requested to so-
licit the co-operation of such Agricultnrists,
and Manufacturers in their respective towas,
as ma be able, to contribute any product of
their abor and skill that will add an interest
to the Exhibition, and also to invite to mem-
bership their friends and neighbors.

ous novelties comprised in this exhibition is the great
modern wonder of animal sugacity, known as tho
Educated Bull,
Wlin will be performed by his celebrated trainer, Sig.
(.‘ASTELLA. in all those famous tricks for which be is
so highly renowned, both in the island of Cuba and in
the United States.
The present is the only instance known in which the
intractable nature of the bill] has been sufficiently sub-
dued to teach him anything like a performance. The
time. and labor employed in this effort would have dis-
couraged any other trainer than Signor liasfellu, and it
was only after months of perseverance that lie lifts at
length accomplished the difficult task.
This remarkably educated animal has been success~
fully taught to go through all the different tricks and
antics usually exhibited by trained dogs and ponies,
while he executes them with the some sagacity and flu-
nmst amusing and ludicrous effects. At the command
of his keeper he will jump over bars and through bal-
loons, coming up to his trainer at :t given signal, put~
ting himself" in various attitudes, and finishing his ex—
ploits by forming ft picturesque tableau upon a platform
and is in that manner carried from the presence of the
audience, upon the shoulders often men.

Do hereby certify,nt the request of the house of (lot-
tig & Will, of this place, I have made an analitical ex-
amination of U. Wolfe‘s Aromatic Schiedam Schnapps,
with the object of ascertaining ifit contained any sub-
stance noxious tu health, and to inform them as to its
true composition and relative quality with the other
gins that are offered in the market, and the results of
my observations are as follows :—
Udnlpho Wolfe’s aromatic Sclildam schnapps is a
spirituous liquid, of a very agreeable aromatic odor,
completely transparent and almost colorless, having
only a very slight tint of llowisli gray; its flavor
is strong and very agreeable the palate. It marks
‘20 degrees in Catier’s alcohol weiglier or 52 degrees 5

tillation in a balafum maria, with an apparatus consist:
nfa glass retort and a recipient surrounded with ice, I
have collected in this recipient an alcoholic liquid with
a. very agreeable aroma completely colorless and trans-
parent, which marked 90 degrees in Cartier‘s alcoholic
\veigber, or 70 degrees 5 hundredth on Gay Lussac’s al-
conictro ; and which represented as a whole 57 per
cent, ofaromatic Scliiedani scliapps subject to distillas
lion in the retort. This liquid did not soil the tran‘
parency of the distilled water in mixing it with the same
and its agreeable arpma is doubtless due to a very tri-
fling amount of an essential] oil inseparable from a]-
calm].
From the remainder of the distillation which was left
in the retort I have obtained, through evaporation in a
vapor bath, a substance of a yellowish brown color,
clear, and having a bitter taste which is not disagreea-
ble, and which afterwards becomes aromatic and leavell
the mouth perfumed with that fragrance peculiar to the
.vanilfa. 1 am Inclined to believe that to this bitterand
aromatic extractive substance, soluble in water and al-
cohol, the medicinal properties which are attributed to
this pill] are due. I have not found in Udolplio Wolfe’s
aromatic Schiedum schnapps any mineral or organic
substance other than the extractive one already named
and the aromatic one Obtained by distillation. Finally,
Uflfllplln Wolfe’s aromatic Sebimlam schnapps consists
simply ol‘an aromatic alcohol of20 degrees of gradua-
tion in (‘urtier’s alcoholic weigber, and of an extractive
bitter aromatic substance, which perhaps, is medicinal;
and on account of its not containing any matter injuvi.

—-a fact which no doubt arises from the choice sub-
stances einplcyed in its manufacture, and from the pe-
culiar manner ofits distillation, it should in my opinion
be preferred to all the Holland, Belgic and German gins
which are found in this Island which it has been my
business to examine. These gins as l have often pro~

less disagreeable flavor, some of them haviuglef t as was
the case with the superior gin from the distillery of Mr.
Henry Deetjen (of Bremen), as rcsidum after evapora-
tion by steam, at subtance almost incipid and very tri-
llingl‘y aromatic, with flavor of vanila, but. in no wise
with the delicious bitter and aromatic flavor of that of
Udolplio Wolfe ; and others, such as that labelled “Gen.
uinc Samaritan,” “ Extra superior.” Messrs Tracker
have furnished me a very small quantity of a greenish
substance, of harsh metalic taste and very disagreeable
which extractive organic matter was mixed with a salt
ofeopper, with sugns of iron, owing perhaps, to a bad
system of distillation.
I cf’rtify that all that is here stated is the truth and
agrees with the experiments I have made with the
greatest cure and I authorize the house ofGottig &Will
of this city, to give publicity to this certificate in Span-
isli and in foreign languages, in all countries where it
may suit their interest to do so.
