HIS Fair will be holdcn in Norman. on
Tuesday, Wednesday,Thursday and Fri-
day the 270., 28th, 29th, and 30m dove ol‘Sep-
tember 1859, on the Molt Property Park, a
convenient rad central point of access from
the Railroads.
The Committee of Arrangements are confi-
dent lhat the liberal Premiums offered, and
the desirable and attractive arrangements
which will be made, will bring out not only
unsurpassed display of the fine animals with
which our County abounds, but will also se-
cure the oo-operation of our many Manufac-
turers. Mechanics Artizans, d'... thus render-
lng this Fair one of the most attractive and
satisfactory exhibitions ever held in this
County.
The efforts 0f every friend of the Society
are earnestly solicited to aid to the extent of
their ability , in adding any feature of' attrac-
tion to the Exhibition. The Ladicsalso, are,
cordially invited toprcseut the varied fruits
of their handiwork.
It is desirable that early notice be given the
Secretaries by those who design to exhibit,-
and the amount and character of space they
will require,in order that suitable arrange-
ments may he made therefor.
Arrangements will be made with our Rail.

tended for exhibition, free.
. Those appointed on Committees will confer
a great favor by notifying the Secretary of

Chemistry, as applied to the Arts, of the Royal Con-
nervatorro of Madrid, and of physique and Chemistry,
as applied to the Industry and Agriculture of the
country, in the Royal University of this Island, at
present II. M,’s Director of the Institute of Chemical
Investigations, kc , kc.
Do hereby certify,at the request of the house of Got-
tig & Will, of this place, I have made an analiticul ex-
amination of U. Wolfe’s Aromatic Schiedam Schnapps,
with the object of ascertaining ifit contained any aub-
etnnce noxrous to health, and to inform them as to its
true composition and relative quality with the other
gins that are offered in the market, and the results of
my observations are as follows :—
Udolpho Wolfe’s aromatic Schldam schnapps is a
spirituous liquid, of a very agreeable aromatic odor,
completely transparent and almost colorless, having
only a very slight tint of yellowish gray; its flavor
is strong and very agreeable to the palate. It marks
20 degrees in Cutier’s alcohol weiglrer or 52 degrees 5
hundredth in Gay Lussac’s alcohomelre. By the dis-
trllntinn in a bulmum maria, with an apparatus consist-
ofa glass retort and a recipient surrounded with ice, I
have collected in this recipient an alcoholic liquid with
a very agreeable aroma completely colorless and trans-
parent, which marked 90 degrees in Cnrtier‘s alcoholic
weigher, or 70 degrees 5 hundredth on Gay Luseac’s al~
comctro ; and which represented as a whole 57 per
cent. ofaromatic Schie-lam sclmpps subject to distillas
lion in the retort. This liquid did not soil the tram
parency of the distilled water in mixing it with the some
and its agreeable ammo is doubtless due to a very tri-
fling amount of an essential] oil inseparable from nl-
cohol.
From the remainder of the distillation which was left
in the retort l have obtained, through evaporation in a
vapor bath, a substance of a yellowish brown. color,
clear, and having a bitter taste which is not disagreea-
ble, and which afterwards becomes aromatic and leaves
the mouth perfumed with that fragrance peculiar to the
vanilla. I am Inclined to believe that to this bitterand
aromatic extractive substance, soluble in water and al-
cohol, the medicinal properties which are attributed to
this gin are due. I have not found in Udolpho Wolfe’s
aromatic Schicdam schnapps any mineral or organic
substance other than the extractive one already named
and the aromatic one obtained by distillation. Finally,
Udolpho Wolfe’s aromatic Schiedam schnapps consists
simply of an aromatic alcohol of 20 degrees of gradna.

be preferred to all the Holland, Belgic and German gins
which are found in this Island which it has been my
business to examine. These gins as I have often pro~
vcd, it exhale a dimgreeable odor, and have a more or
less disagreeable flavor, some of them having left as was
the case with the superior gin from the distillery of Mr.
Henry Deetjen (of Bremen), as residum after evapora-
tion by utenm, a subtance almost incipid and very tn.

with the delicious bitter and aromatic flavor of' that of
Udolpho Wolfe ; and others, such as that labelled “Gen-
uine Samaritan,” “ Extra superior.” Messrs Tracher
have furnished me a very small quantity of a greenish
substance, of harsh metalic taste and very disagreeable
which” extractive organic matter was mixed with a salt
of copper, with Signs of iron, owing perhaps, to a bad
system of distillation.
I certify that all that is here stated is the truth and
agrees with the experiments I have made with the
greatest care and I aulhorize the house of Gottig 8; Will
of this city, to give publicity to this certificate in Span-
ish and in foreign languages, in all countries where it
may suit their interest to do so.
