al Academies of Madrid and Munich, a graduate in
Sciences of the Faculty of Paris, formerly Professor of
Chemistry, as ’ applied to the Arts, of the Royal Con-
servatorio of Madrid, and-of physique and Chemistry,
as applied to the Industry and Agriculture of the
country, in the Royal University of this Island, at
present H. M,’s Director of the Institute of Chemical
Investigations, &c., kc.
Do hereby certify,at the request of the house of (lot-
tig 8: Will, of this place, I have made an analitical ex -
amiuntion of U. Wolfe’s Aromatic Schiedam Schnapps,
with the object of ascertaining it'it contained any sub-
stance noxlous to health, and to inform them as to its
true composition and relative quality with the other
gins that are offered in the market, and the results of
my observations are as follows :—
Udolpbo Wolfe’s aromatic Schldam schnapps is a
spirituous liquid, of u very agreeable aromatic odor,
completely transparent and almost colorless, having
only a very slight tint of yellowish gray ; its flavor
is strong and very agreeable to the palate. It marks
20 degrees in Catier’s alcohol weighcr or 52 degrees 5
hundredth in Gay Lussac’s alcohomctre. By the dis-
tillation in a balaIum maria, with an apparatus consist-
of a glass retort and a recipient surrounded with ice, I
have collected in this recipient an alcoholic liquid with
a very agreeable aroma completely colorless and trans-
parent, which marked 90 degrees in. Cartier-’5 alcoholic
weigher, or 70 degrees 5 hundredth on Gay Lnssac’s al-
cometre ; and which represented as a whole 57 per
cent. of aromatic Schicdam schnpps subject to distillns
tion in the retort. This liquid did not soil the tran‘
parency of the distilled water in mixing it with the some
and its agreeable aroma is doubtless due to a very tri-
fling amount of an essentiall oil inseparable from 81-
cohol.
From the remainder of the distillation which was left
in the retort I have obtained, through evaporation in a
vapor bath, a substance of a yellowish brown color,
clear, and having a bitter taste which is not disagreea-
ble, and which afterwards becomes aromatic and leaves
the mouth perfumed with that fragrance peculiar to the
vanilla. 1 am Inclined to believe that to this bitterand
aromatic extractive substance, soluble in water and sl-
cohol, the medicinal properties which are attributed to
this gin are due. I have not found in Udolpho Wolfe’s
aromatic .Schiedam schnapps any mineral or organic
substance other than the extractive one already named
and the aromatic one obtained by distillation. Finally,
Udolpho Wolfe’s aromatic Schicdam schnapps consists
simply of an aromatic alcohol of 20 degrees of gradua-
tion In Cartier-’8 alcoholic weigher, and of an extractive
bitter aromatic substance, which perhaps, is medicinal;
and on account of its not containing any matter injuri-
ous tche health, as well as for its odor and good flavor
-u fact which no doubt arises from the choice sub.
stances emDIchd in its manufacture, and from the pe-
cullar manner of its distillation, it should In my opinion
be preferred to all the Hollan Belgic and German gins
which are found in this Is which it has been my
business to examine. These gins as l have often pro-
ved, it exhale a disagreeable odor, and have a more or
loss disagreeable flavor, some of them having left as was
the use with the superior gin from the distillery of Mr.
Henry Deetjen (of Bremen), as rcsidum after evapora-
tion by steam, n subtunce almost incipld and very tn-
filngly aromatic, with flavor of vaniln, but in no wise
with the delicious bitter and aromatic flavor of that of
Udolpho Wolfe ;nnd others, such as that labelled “Gen.
nine Samaritan,” “ Extra superior.” Messrs Tracker
have furnished Inc a very small quantity of a greenish
substance, of harsh mctulic taste and very disagreeable
which extractive organic latter was mixed with a salt
ofcoppcr, with signs of iron, owing perhaps, to u. had
system of distillation.
I certify that all that is here stated is the truth and
agrees with the experiments I have made with the
greatest care and I authorize the house of Gottig & Will
of this city, to give publicity to this certificate in Span-
ish and in foreign languages, in all countries where it
may suit their interest to do so.
